Cooking while camping can be loads of fun, especially when you can make things the whole family can get involved in. Simple, but tasty dishes are our golden rule when we’re camping, and we’ve got plenty things we’d love to share with you! This is a new section of our site, so keep an eye out for new recipes and videos. We’ll demonstrate a range of cooking techniques that we use while camping, and we’ll prepare all sorts of dishes that will simply tantalise your taste buds!
This recipe is one of the more popular dishes we like to cook when we’re camping or at home as you can whip it up in no time. It’s full of flavour and can easily be adjusted for the kids. With a bit of homemade camp oven bread, damper or even store bought flatbreads, mopping up that delicious sauce will leave your bowl clean! We recommend a good glass or two of red wine to accompany this dish as it will be a real crowd pleaser. 🙂
We used Uniflame cooking gear for this recipe which is available in Australia from Drifta Camping & 4WD.
- 1 large onion chopped
- 2 teaspoons minced garlic
- 4 rashers bacon diced
- 2 tablespoons olive oil
- 2 tins diced tomatoes
- 1 tablespoon tomato paste
- Chilli to taste (optional)
- 1 cup red wine
- 3/4 cup pitted olives
- 1 tablespoon capers (optional)
- 1 packet pasta
- Parmesan cheese
Heat olive oil and add chopped onion in a pan. Cook for 2-3 minutes before adding garlic. Continue stirring while cooking until onions are soft. Then add bacon and cook for a further 3 minutes. Add diced tomatoes followed by tomato paste and stir through. Add red wine, chilli, olives and capers, stirring well to combine. Cover pan with a lid and cook on a simmering heat for around 15-20 minutes, stirring occasionally.
For cooking the pasta, bring some water to the boil and season well with salt before adding the pasta in. Cook for around 10-12 minutes, then drain water.
To serve, we like to add a couple of spoonfuls of the sauce to the drained pasta to coat all the pasta first. Serve in bowls with extra sauce on top and lashings of your favourite parmesan or pecorino cheese.
Note:- Recipe is suitable for 3-4 people, although this will normally do us (two adults) for two meals. The sauce is suitable for freezing so it’s simply a matter of “heat and “eat” next time. And that makes it perfect for camping!
